Gluten Free Frozen Berry Mocktails Recipe

               
Strawberries, blueberries, and coconut cream combine in this deliciously patriotic, icy cool mocktail recipe. Sip on heart-healthy fruit layers that make an impressive display for the 4th of July.

Recipe yields 4 servings
Strawberry Layer
1 Tbsp honey
2 cups frozen strawberries
1 Tbsp lemon fresh juice
1/2 cup ice cubes
Coconut Layer
1/4 cup cold coconut cream
1 banana, sliced and frozen
1/2 cup frozen pineapple chunks
1/2 cup ice cubes
Blueberry Layer
1 Tbsp honey
1 1/2 cups frozen blueberries
1/2 ice cube

Directions
Strawberry Layer
Step 1

Make the strawberry layer: In a blender, combine all the strawberry layer ingredients and blend just until smooth. Pour into a freezer-proof container and freeze while preparing the other layers, for at least 1/2 hour.

Coconut Layer
Step 1

Make the coconut layer: Rinse out the blender. Add all the coconut layer ingredients and blend just until smooth. Pour into a freezer-proof container and freeze while preparing the other layers, for at least 1/2 hour.

Blueberry Layer
Step 1

Make the blueberry layer: Rinse out the blender. Add all the blueberry layer ingredients and blend just until smooth. Pour into a freezer-proof container and freeze for at least 1/2 hour.

Step 2

Prepare the mocktails: In 4 glasses, evenly divide the strawberry layer, the coconut layer and the blueberry layer. Serve frozen.
