Grilling this Turkey London Broil is ideal because it adds a wonderful depth of flavor to the recipe. However, if grilling isn’t an option for you, this recipe is also delicious cooked in an oven.
Preheat your oven to 425℉. Place the marinated turkey breast in a roasting pan. Place the turkey breast in the oven and bake for 30 minutes. After 30 minutes, tent the turkey breast with foil and continue to bake until the turkey is cooked through, and a meat thermometer inserted into the thickest part of the breast reads 165℉. This should take about 30 additional minutes. However, you need to use the meat thermometer as a cooking guide. Once it reaches 165℉, the turkey is finished cooking.
The marinade for this healthy turkey recipe is where the dish gets its delicious flavor. You can’t skip the marinade or marinate the turkey for less than 3 hours. Ideally, you can marinate the turkey breast overnight but 3 hours is the absolute minimum.
Combine all of the marinade ingredients and place in a sealed container with the turkey breast. Make sure as much of the turkey breast is covered in the marinade as possible. Flip or turn the turkey breast every couple of hours to ensure every part of the breast is submerged in the marinade. If you can only marinate the turkey breast for 3 hours, turn it halfway through the marinate time.
Regardless of how long you marinate the turkey breast, be sure to discard the marinade before cooking the turkey.
Recipe yields 8 servings
In a large cup, combine olive oil, balsamic vinegar, soy sauce, scallions, ginger and brown sugar. In a large, shallow baking dish, arrange turkey breast and pour marinade over turkey to cover. Turn turkey to coat boat sides. Cover and marinate in refrigerator for at least 3 hours or overnight.
Preheat grill to medium-high heat. Remove turkey from marinade. Season turkey with salt and black pepper. Grill the turkey 8 minutes on each side, or until a meat thermometer inserted in the thickest part of the turkey breast registers 165°. Let the turkey rest for 5 minutes before slicing.
