Gluten Free Quinoa Sausage Soup Recipe

               
Chicken sausage and pork loin lend a hearty flavor to this high-protein soup. Just sauté, simmer and serve — and add a satisfying kick to each sip with a dash of crushed red pepper.

Ingredients
Recipe yields 6 servings
1 Tbsp olive oil
1/2 medium yellow onion
4 garlic cloves, minced
6 cups water
3/4 cup quinoa, rinsed
9 oz cooked pork loin, cubed
3 chicken sausages (3 oz each)
1 cube chicken bouillon
1/8 tsp black pepper
1/8 tsp crushed red pepper flakes

Directions
Step 1

In a medium saucepan, heat olive oil over medium-high heat until hot. Add onion and garlic, and sauté until onion is softened.

Step 2

Add remaining ingredients, reduce heat to medium-low and simmer for 15 minutes. Remove chicken sausages and cut into 1/4-inch slices.

Step 3

Return chicken sausage back to pot and simmer for 30 to 45 minutes. Serve hot.
