Gluten Free Spinach Salad Recipe

               
Try an easy, tangy spinach salad for a heart-healthy meal on the go. Chickpeas, walnuts, and feta cheese give this salad a hearty lift that’s perfect for the whole family. Chill for at least 2 hours before serving to allow the flavors to meld.

Recipe yields 4 servings
1/4 cup chopped walnuts
1 can (16 oz) kidney beans, rinsed and drained
1 can (16 oz) chickpeas, rinsed and drained
6 cups spinach leaves
1 Tbsp olive oil
1 Tbsp balsamic vinegar
1 Tbsp lemon juice
1/4 small red onion, sliced
2 Tbsp crumbled low fat feta cheese
1/4 tsp black pepper

Step 1

In a large mixing bowl, combine all ingredients. Toss to coat evenly. Serve immediately, or chill, covered, for up to 2 hours before serving.
