Place the pork chops in a 9x13-inch baking dish.
In a medium mixing bowl, whisk together the orange juice, olive oil, honey, Dijon mustard, and soy sauce. Add garlic, orange zest, thyme, and black pepper; stir to combine.
Pour marinade over pork chops to coat evenly. Marinate for at least 1 hour, flipping about half way through to coat again (Note: for best flavor, marinate up to 8 hours or overnight).
Preheat grill to medium heat, around 350°F. Place marinated pork chops on grill and cook 5 to 6 minutes per side, until a meat thermometer inserted into the thickest part of the pork chops registers 145°F.
Remove from heat and let rest for 5 minutes. Serve garnished with chopped fresh thyme and a side of grilled vegetables or a fresh green salad.
