Recipe yields 16 servings
1 very ripe banana, mashed
1/2 cup unsweetened applesauce
3/4 cup brown sugar, packed
1 egg yolk, room temperature
1 tsp vanilla extract
2/3 cup all-purpose flour
2/3 cup whole wheat flour
1/2 tsp baking soda
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp Kosher salt
1/2 cup dark chocolate chips

Directions
Step 1

Preheat the oven to 350°F and line a large rimmed baking sheet with parchment paper. Set aside.

Step 2

In a large bowl, combine the mashed banana, applesauce, brown sugar, egg yolk and vanilla extract and mix until just combined.

Step 3

Sift together the flours, baking soda, cinnamon, nutmeg and salt into a separate large bowl. In small batches, add the flour mixture to the wet ingredients and mix until well combined.

Step 4

Lightly spray the parchment paper with nonstick cooking spray. Spoon the dough onto the prepared baking sheet by rounded tablespoonfuls, spacing each mound of dough 2-inches apart. Bake for 10 to 11 minutes, or until the edges are set and the cookies have risen. Allow to cool completely before enjoying.
