Healthy Kids Banana Pancakes Recipe

               
Did you wake up to find a couple of overripe bananas sitting on your counter? Try making our light and fluffy banana pancakes! These delicious gluten-free delights are bursting with the natural sweetness of bananas and make for a quick and easy option for breakfast.

Ingredients
Recipe yields 6 servings
1 cup gluten-free 1:1 baking flour
1 Tbsp granulated sugar
2 tsp no sodium baking powder
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp Kosher salt
1 large egg, beaten
1 cup low fat buttermilk
2 Tbsp unsweetened applesauce
2 very ripe bananas, mashed
1 tsp vanilla extract

Directions
Step 1

In a medium mixing bowl, sift together the flour, sugar, baking powder cinnamon, nutmeg and salt using a fine mesh sieve. In a separate medium mixing bowl, whisk together the egg, buttermilk, applesauce and mashed banana. Add the wet ingredients to the dry ingredients and mix until just combined; the batter will be slightly lumpy.

Step 2

Lightly grease a griddle or frying pan with nonstick cooking spray and heat over medium-high heat. Using a ¼-cup measuring cup, spoon the batter onto the griddle or frying pan. Cook until the pancakes are golden brown, about 3 to 5 minutes per side. Serve hot. If desired, serve with fresh fruit, maple syrup, peanut butter or fruit preserves. Enjoy!
