Healthy Kids Beef Tacos Recipe

               
Use pantry staples to make a peppery beef taco that is hearty and easy to customize. Chopped tomatoes and shredded cheese round out this savory winner.

Ingredients
Recipe yields 10 servings
1 lb 93% lean ground beef
1 cup chopped onion
1/2 cup water
1/4 tsp salt
1/8 tsp black pepper
1 can (8 oz) tomato sauce
1 tsp chili powder
1/2 tsp ground cumin
10 corn taco shells (6-inch diameter)
1/4 cup shredded low fat cheddar cheese
Chopped lettuce plus tomato, for garnish

Directions
Step 1

Lightly coat a large nonstick skillet with nonstick cooking spray. Heat skillet over medium-high heat until hot. Sauté ground beef for about 5 minutes, or until browned, stirring to crumble meat. With a slotted spoon remove beef from pan and set aside. Drain fat from pan. Add onion and sauté until softened.

Step 2

Return beef to pan and add water, salt, pepper, tomato sauce, chili powder and cumin. Bring to a boil; reduce heat and simmer for 10 minutes, or until thickened.

Step 3

Warm taco shells according to package directions. Fill tacos evenly with beef mixture and top with cheese, lettuce and tomatoes
