Healthy Kids Cauliflower Stir-Fry Recipe

               
Fresh ginger, garlic and soy sauce combine to give this vegan stir-fry mouthwatering flavor. You are sure to love the deliciously complex flavor and 30-minute prep time.

Recipe yields 4 servings
1 Tbsp olive oil
1 small red onion, chopped
3 garlic cloves, minced
1 Tbsp minced fresh ginger
1 large head cauliflower, cut into florets
1 red bell pepper, diced
2 Tbsp reduced-sodium soy sauce (gluten free if needed)
2 Tbsp fresh lime juice (about 1 lime)
3 scallions, chopped (plus additional for garnish)
2 Tbsp chopped pistachios (optional)
1 1/2 Tbsp hot sauce, or to taste
2 Tbsp chopped fresh cilantro

Directions
Step 1

In a nonstick skillet, heat the oil over medium-high heat. Add the onion and sauté until softened, about 2 minutes. Add the garlic and the ginger and cook for 1 minute. Add the cauliflower and bell pepper and sauté until the cauliflower is golden brown and crisp tender, about 5 minutes.

Step 2

Reduce heat to low. Add the soy sauce, lime juice, scallions and pistachios (if using) and cook for 1 minute. Add the hot sauce and cook for 1 minute more. Garnish with cilantro and additional chopped scallions, if desired.
