Have a hearty, high-protein lunch breakfast or lunch ready in under 10 minutes with this tasty egg salad sandwich recipe. Romaine lettuce and chopped celery add an irresistible crunch to this old-fashioned favorite.

3 hard-boiled eggs
2 tsp chopped celery
2 Tbsp light mayonnaise
1/8 tsp black pepper
2 slices light whole wheat bread, toasted
2 leaves Romaine lettuce

Step 1

Chop 1 whole egg.

Step 2

Discard the egg yolks of the other 2 eggs and chop egg whites.

Step 3

In a bowl, combine chopped egg and egg whites, celery, mayonnaise and pepper.

Step 4

Spread the egg salad on 1 slice of bread. Top with lettuce leaves and other slice of bread.
