Healthy Kids Frankenstein Avocado Toast Recipe

               
Electrify your breakfast back to life with our Frankenstein Avocado Toast! These monstrously delicious creations combine creamy avocado, zesty lemon and an assortment of healthy decorations for a fun and spooky way to jumpstart your Halloween hauntings.

Ingredients
Recipe yields 2 servings
2 slices whole grain bread, toasted
1 ripe avocado, peeled, pitted and mashed
1 tsp lemon zest
1 tsp fresh lemon juice
1/4 tsp Kosher salt
12 reduced sodium black olives
2 slices red bell pepper
4 slices water chestnuts

Directions
Step 1

In a small bowl, combine the mashed avocado, lemon zest, lemon juice and salt.

Step 2

Toast the bread. Spread the avocado mixture evenly between the 2 slices of toast.

Step 3

Slice 4 olives in half lengthwise. Cut each half so that one end is pointed. Place the olives along the top edge of the toast for the “hair.”

Step 4

Lay 2 slices of the water chestnuts in the center of the toast. Slice 1 olive widthwise into 4 rounds. Place 1 round on top of each slice of water chestnut to complete the “eyes.”

Step 5

Place 1 slice of bell pepper beneath the “eyes” for the “mouth.” To make the “scars,” slice 1 olive in half lengthwise and slice each half into 4 slivers lengthwise. Cut 4 slivers into small pieces. Lay the 4 slivers on the toast and place the small pieces along each side of the slivers to complete the “scars.” Devour immediately.
