Healthy Kids Monster Pancakes Recipe

               
Serve up frightening fun for breakfast with these healthy, monster-shaped pancakes. Mashed bananas, eggs and all-purpose flour create fluffy, diabetic-friendly flapjacks that everyone will love.

Ingredients
Recipe yields 6 servings
4 large eggs, separated
2 ripe bananas, mashed plus 1 banana, sliced
1 1/4 cups all-purpose flour
1 tsp baking powder
1/4 tsp ground cinnamon
1/8 tsp salt
2 Tbsp peanut butter
1/4 cup fresh blueberries
3 fresh strawberries, sliced into strips

Directions
Step 1

In a large bowl, whisk together the egg yolks, the 2 mashed bananas, flour, baking powder, cinnamon and salt. In a separate large bowl, using a hand mixer, whip the egg whites until stiff peaks form, about 4 to 5 minutes.

Step 2

Gently fold the whipped egg whites into the batter until evenly combined.

Step 3

Lightly coat a griddle with nonstick cooking spray and heat over medium-low heat. For each pancake, pour about 1/4-cup batter onto the pan, spreading it out evenly. Cook, turning once, until both sides are lightly golden.

Step 4

If desired, cut out small circle shapes from 1 or 2 pancakes for the "arms" and "legs."

Step 5

On a plate, arrange a pancake with 4 small pancake circles to make the "arms" and "legs." Arrange 3 round banana slices on the top of the pancake. Top the banana slices with a small smear of peanut butter and place 1 blueberry on each banana slice to make the "eyes." Arrange the strawberry slices and triangle-shaped banana slices to make the "lips" and "teeth."
