Healthy Kids Strawberry Shortcake Parfaits Recipe

               
This healthy twist on a strawberry parfait is low in fat and uses creamy yogurt instead of whipped cream. Dive into a cloud-like treat that serves up sweet, silky flavor without the guilt.

Ingredients
Recipe yields 4 servings
1 pint fresh strawberries, hulled and cut into 1-inch chunks
1 Tbsp sugar
1 tsp honey
1 cup low-fat vanilla Greek yogurt
1/4 tsp lemon zest
1/2 store-bought angel food cake, cubed
Fresh mint, for garnish

Directions
Step 1

In a bowl, toss berries with sugar and honey. Cover and chill for 30 minutes to 1 hour.

Step 2

In another bowl, mix yogurt and lemon zest.

Step 3

Build shortcakes in parfait glasses or tumblers using a few cubes of angel food cake for bottom layer, followed by 1 tablespoon of strawberries, then 2 tablespoons of yogurt mixture. Repeat process to make another layer. Dollop any leftover yogurt mixture on top, and garnish with fresh mint leaves.
