Healthy Kids Veggie Wrap Recipe

               
Garlic hummus and sliced zucchini are the stars of this healthy wrap recipe. Creamy avocado, carrots, and bell pepper bring fresh, wholesome flavor to every bite.

Ingredients
Recipe yields 6 servings
1 medium zucchini, cut into 1/4-inch slices
1 tsp olive oil
Black pepper to taste
1/2 cup garlic hummus
6 whole wheat or multigrain tortillas (8-inch diameter)
1 Tbsp pine nuts
2 carrots, shredded
1 bell pepper, sliced thin
1/2 avocado, peeled and sliced
1 1/2 cups lightly packed spinach
1 small red onion, sliced thin

Directions
Step 1

Brush the zucchini with the olive oil and season with the black pepper. In a skillet over medium heat, sauté the zucchini until lightly browned, about 4 minutes.

Step 2

Evenly spread the hummus over each tortilla. Sprinkle the pine nuts over the hummus. Top with zucchini, carrots, bell pepper, avocado, spinach and onion. Roll up each wrap and cut in half on the diagonal.
