How to Make Banana Pancakes

  1. Step 1

    In a medium mixing bowl, sift together the flour, sugar, baking powder cinnamon, nutmeg and salt using a fine mesh sieve. In a separate medium mixing bowl, whisk together the egg, buttermilk, applesauce and mashed banana. Add the wet ingredients to the dry ingredients and mix until just combined; the batter will be slightly lumpy.

  2. Step 2

    Lightly grease a griddle or frying pan with nonstick cooking spray and heat over medium-high heat. Using a ΒΌ-cup measuring cup, spoon the batter onto the griddle or frying pan. Cook until the pancakes are golden brown, about 3 to 5 minutes per side. Serve hot. If desired, serve with fresh fruit, maple syrup, peanut butter or fruit preserves. Enjoy!
