Heart Healthy Bruschetta Recipe

               
Classic, Italian-inspired bruschetta is a deliciously healthy way to get in your veggies. Mini baguette toasts are topped with tomatoes, olives, and pistachios for a wonderfully tangy bite.

Recipe yields 12 servings
1 multigrain baguette loaf, sliced into 1/4-inch slices (about 36 slices)
Tomato Basil Topping
1 large tomato, seeded and chopped
1 minced garlic clove
1/4 medium red onion, chopped
1/4 cup chopped fresh basil
1 tsp dried oregano
1 Tbsp balsamic vinegar
Kalamata Olive Topping
1/4 cup chopped Kalamata olives
1/2 cup chopped red roasted pepper
1/4 cup feta cheese
1 tsp olive oil
1 Tbsp red wine vinegar
Black pepper to taste
Pistachio Topping
1/3 cup pistachios
1/2 cup chopped fresh cilantro
2 Tbsp fresh lemon juice
1 Tbsp low-fat zesty Italian dressing
Black pepper to taste

Directions
Baguette Toasts
Step 1

Preheat oven to 350°.

Step 2

Arrange baguette slices on 2 baking sheets. Lightly coat baguette slices with nonstick cooking spray. Toast baguette slices in oven for about 5 minutes, or until lightly browned. Remove from oven and set aside.

Step 3

Arrange baguette toasts on a platter. Each topping will make enough for about 12 toasted baguette slices.

Tomato Basil Topping
Step 1

In a bowl, mix together Tomato Basil topping ingredients. Spoon topping on top of toasted baguette slices.

Kalamata Olive Topping
Step 1

In a bowl, mix together Kalamata Olive topping ingredients. Spoon topping on top of toasted baguette slices.

Pistachio Topping
Step 1

In a bowl, mix together Pistachio topping ingredients. Spoon topping on top of toasted baguette slices.
