These aromatic, cheesy cauliflower crisps are the low-calorie treat you have been looking for. Fresh basil, black pepper, and Parmesan cheese impart a richly savory taste to this oven-baked snack recipe.

Recipe yields 17 servings
1 head cauliflower
1 cup grated Parmesan cheese
1 garlic clove, minced
1 tsp finely chopped fresh basil
1 tsp finely chopped fresh parsley
1/2 tsp black pepper

Step 1

Preheat the oven to 400°. Line 2 rimmed baking pans with parchment paper and lightly coat parchment with nonstick cooking spray.

Step 2

With a grater, grate the cauliflower into a bowl. Add the cheese, garlic, basil, parsley and black pepper. Press a small handful of the cauliflower mixture into a thin round and place in the baking pan. Continue with the remaining cauliflower mixture. Bake for 10 minutes. Turn the cauliflower crisps and bake for an additional 10 minutes, or until browned.

Step 3

Let cool for 1 minute before removing from the pans. Serve immediately.
