Chop off the base and tops of the bunch of celery. Separate the stalks. Wash celery thoroughly, rubbing your fingers along surfaces of each stalk on the inside and outside.
If using a juicer, run celery stalks, apples, and lime through feeding tube of juicer. For best results, alternate passing celery and apples through the juicer.
If using a blender, line a fine mesh sieve with cheesecloth and set over a bowl. Add celery stalks, apple, and lime to blender pitcher. Add 1 cup cold water. Turn blender on and gently use the blender tamper to push the celery, apple and lime into the blade. Pour blended celery mixture through the cheesecloth-lined sieve to remove pulp from juice. Discard pulp.
Enjoy immediately for best taste. If necessary, stir in a teaspoon of maple syrup for a touch of extra sweetness. For any leftover juice, store in an airtight jar in the refrigerator for up to 3 days.
