Heart Healthy Cheese Corn Waffles Recipe

               
Need a healthy accompaniment to a hearty bowl of warm chili? These crispy and savory corn waffles are low in fat and loaded with flavor, making them perfect for dipping or a quick and easy snack.

Ingredients
Recipe yields 7 servings
1 cup cornmeal
2 Tbsp gluten-free self-rising flour
1/2 tsp salt
1 tsp baking powder
2 Tbsp unsweetened applesauce
1/2 cup nonfat plain Greek yogurt, room temperature
1/2 cup oat milk, room temperature
1 large egg, room temperature
2 Tbsp chopped fresh cilantro
1/2 cup reduced-fat shredded cheddar cheese
1/2 cup whole kernel corn, fresh or frozen
2 Tbsp sliced thin green onion
Non-stick cooking spray

Directions
Step 1

Preheat oven to 200°F. Line a large rimmed baking sheet with parchment paper and set aside.

Step 2

Mix all of the dry ingredients together in a medium mixing bowl. In a separate medium mixing bowl, combine the applesauce, yogurt, oat milk and egg and mix until well combined.

Step 3

In small batches, add the dry ingredients to the wet ingredients until just combined. Add the cheese, corn kernels, green onion and cilantro and mix until well combined.

Step 4

Generously spray a waffle maker with nonstick cooking spray. Spoon the batter into the bottom half of the waffle maker, close the lid and cook for 3 to 5 minutes, or until golden brown. Transfer the cooked waffle to the prepared baking sheet and place in the oven to keep warm. Repeat with the remaining batter. Serve immediately.
