Our gluten-free cheese quesadillas are sure to be a hit with adults and little ones alike. This flavor-packed, 4-ingredient winner is ready in minutes and offers up smooth and spicy flavor.

Recipe yields 4 servings
4 tsp unsalted butter
8 corn tortillas (8-inch diameter)
1 cup shredded reduced-fat Monterey jack cheese or cheddar cheese
1/4 cup mild salsa

Step 1

In a skillet, melt 1 teaspoon of the butter over medium heat. Place 1 tortilla in skillet and top with 1/4 cup cheese. Top with second tortilla. Grill 3 to 4 minutes on each side or until golden and cheese is melted. Repeat with remaining butter, tortillas and cheese. Cut into quarters and serve with salsa.
