Add creamy avocado to a succulent chicken breast sandwich and enjoy restaurant-worthy flavor any time. This heart-healthy lunch recipe uses sturdy whole wheat rolls and sliced red onion to create the perfect bite.

2 light whole grain rolls, split
4 leaves Romaine lettuce
1/2 tomato, sliced
2 slices red onion
2 cooked boneless, skinless chicken breasts (3 oz each)
1/8 tsp salt
1/8 tsp black pepper
1/2 ripe avocado, pitted, peeled and mashed

Step 1

On the bottom half of each roll, layer lettuce, tomato, red onion and chicken. Season chicken with salt and pepper. Spread mashed avocado on top half of roll and place on top of chicken.
