Looking for a low-fat cookie that tastes fabulous? Try these chocolate almond cookies! These chocolate cookies are made with no butter and no oil. In fact, the only fat in the cookie comes from almonds, which contain heart-healthy monounsaturated fats. This healthy cookie even uses egg whites instead of whole eggs to keep the fat content low. You may also be surprised to know that there is only 1g of total fat in each cookie. The rich chocolate flavor of the cookies is thanks to a mix of unsweetened cocoa powder and melted unsweetened chocolate, so you get a double dose of chocolatey goodness. Kids love these cookies, but their upscale flavor palette is equally pleasing to discerning adults. And at only 72 calories per cookie, this yummy treat won’t break the bank on calories if you are trying to watch your weight.
Recipe yields 45 servings
Preheat oven to 350°. Line large baking sheets with parchment paper.
In a medium bowl, combine flours, cocoa powder, baking soda and salt. In a large bowl, beat egg whites with an electric mixer until foamy, about 1 minute. Gradually beat granulated sugar into egg whites. Scrape down the sides of the bowl and beat in brown sugar until smooth, about 3 minutes. Beat in vanilla and melted chocolate.
Stir in the dry ingredients with a wooden spoon until just incorporated. Add almonds and stir to combine.
Drop batter by tablespoonfuls onto prepared baking sheets, 1 1/2 inches apart. If desired, sprinkle the tops of the cookies with toasted sliced almonds. Bake until flat with slightly cracked tops, 10 to 12 minutes. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
