Here’s a lusciously healthy chocolate cake coming in at just 200 calories per serving. Enjoy a rich, tender slice that serves up decadent flavor without excess fat.

Ingredients
Recipe yields 16 servings
1 1/2 cups sugar
2 cups unbleached flour
1/2 cup cocoa powder
2 tsp baking soda
1 egg
1/3 cup canola oil
1/3 cup prune plum filling
2 tsp vanilla extract
1 cup cold water
1 cup skim milk
2 Tbsp confectioners' sugar (optional)

Directions
Step 1

Preheat oven to 350°. Lightly coat a 9- x 13- x 2-inch pan with nonstick cooking spray.

Step 2

In a large bowl, mix together sugar, flour, cocoa and baking soda. Slowly add egg, oil, prune plum filling, vanilla extract, water and milk. Mix until smooth. Pour batter into prepared pan. Bake for 35 to 40 minutes or until set. Transfer to a wire rack to cool completely. Dust with confectioners sugar, if using.
