Recipe yields 2 servings
Slices end off of cucumbers and peel. Chop each cucumber into thirds.
Place cucumbers, mint, water and lemon juice in a food processor or blender. Blend on high for at least 3 minutes, until smooth.
Set a fine mesh sieve or strainer lined with cheesecloth over a large bowl. Pour cucumber mixture into sieve to separate juice from pulp. Use a rubber spatula to help push juice through sieve. Discard pulp.
Pour juice into glasses and enjoy immediately. Store in the refrigerator for up to 24 hours.
