Juicy watermelon footprints paired with fresh grapes, strawberries and cantaloupe make for a naturally sweet treat. And how could you go wrong with pairing delicious fruit with a low fat and diabetic friendly cream cheese and yogurt dip? At only 150 calories a skewer, you may even want to grab a second because this healthy fruit snack is as tasty as it is good for you! These fruit skewers are so easy and fun to make that even the kids can get involved. Just cut the fruit in advance and let them use the dinosaur-shaped cookie cutter to cut out the footprints and add the fruit in any order they’d like. Recipe yields 4 servings
In a small bowl, beat together the cream cheese, yogurt, maple syrup, cinnamon and nutmeg until smooth. Transfer to a serving bowl, cover with plastic wrap and place in the refrigerator.
Using a 3-inch dinosaur footprint cookie cutter, cut out 4 footprints from the round of watermelon.
Assemble the fruit skewers by alternating the fruit on each skewer, ending with the dinosaur footprint at the top. Serve immediately with the chilled yogurt dip.
