Heart Healthy Fruit Cobbler Recipe

Recipe yields 8 servings
1 Tbsp cornstarch
2 Tbsp cold water
1/4 cup sugar plus 1 Tbsp sugar
1 tsp ground cinnamon
6 ripe but firm pears, peeled, cored and sliced into 1/4-inch slices
1 tsp lemon juice
3 Tbsp cold unsalted butter
1 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
3/4 cup low fat milk
1/2 cup low fat whipped topping

Directions
Step 1

Preheat oven to 400°. Lightly coat a 2-quart casserole with nonstick cooking spray.

Step 2

In a small cup, mix the cornstarch with the water until it is smooth.

Step 3

In a large saucepan, mix 1/4 cup of the sugar, the cornstarch mixture and the cinnamon. Stir in the fruit and lemon juice (add 2 tablespoons of water if pears are not juicy). Cook over medium heat, stirring constantly, until the mixture thickens and boils. Boil and stir for 1 minute. Pour the fruit mixture into the prepared casserole. Keep the fruit mixture warm in oven.

Step 4

In a bowl, cut butter into the flour. Add the remaining 1 tablespoon of sugar, baking powder and salt and combine until the mixture resembles fine crumbs. Stir in the milk. Drop dough by spoonfuls onto fruit mixture.

Step 5

Bake for about 20 to 25 minutes, or until topping is golden brown. Serve warm topped with a dollop of whipped topping, if desired.
