Heart Healthy Mummy Meatloaf Recipe

               
Dress up your meatloaf with an edible pasta mummy wrap for a delightful Halloween dish that’s as easy as is it creepy. Ground turkey, mozzarella and fresh parsley combine for a hearty and flavorful bite of Halloween-themed goodness.

Ingredients
Recipe yields 8 servings
1 tsp olive oil
2 cups finely chopped onion
3 garlic cloves, finely chopped
1 medium carrot, finely chopped
1 celery stalk, finely chopped
1 1/2 tsp Worcestershire sauce
1/3 cup finely chopped fresh parsley
1/4 cup ketchup
1 cup whole wheat bread crumbs
1/3 cup skim milk
1 large egg, lightly beaten
1 large egg white, lightly beaten
1 1/4 lbs ground turkey
1 tsp salt
1/2 tsp black pepper
1/4 tsp paprika
8 oz fettuccine or pappardelle pasta
3 oz mozzarella cheese ball, cut in half
2 large black olives
1 strip green bell pepper, cut into bite-size pieces

Directions
Step 1

Preheat oven to 400°F. Lightly coat a 10-inch round baking dish with non-stick cooking spray.

Step 2

In a large skillet, heat oil over medium heat until hot. Add onion and garlic and sauté until onion is softened, about 2 minutes. Add carrot and celery and cook for 3 minutes, or until softened. Stir in Worcestershire sauce, parsley and 2 tablespoons of the ketchup. Set aside.

Step 3

In a large bowl, stir together bread crumbs and milk. Stir in egg and egg white. Add prepared vegetables and stir to combine.

Step 4

Add turkey, salt, black pepper and paprika and mix well with hands.

Step 5

Form turkey into a round loaf and place in prepared pan. Brush meatloaf evenly with remaining 2 tablespoons of ketchup.

Step 6

Bake for 50 to 55 minutes, or until cooked through. Let stand for 5 minutes before serving.

Step 7

Cook pasta according to package directions. Drain and separate pasta strands.

Step 8

Layer the pasta strands over the meatloaf to look like mummy wrappings. Add the mozzarella halves, two olives and two pieces of green bell pepper for the eyes (see photo).
