Recipe yields 32 servings
Peanut Butter Protein Balls
1/2 cup vegan vanilla protein powder
1/2 natural low-sodium crunchy peanut butter
1/3 cup maple syrup
1/3 cup crispy rice cereal
Chocolate Drizzle
1/2 cup vegan dark chocolate chips
1 tsp olive oil
1/3 cup unsalted roasted peanuts, toasted and roughly chopped

Directions
Peanut Butter Protein Balls
Step 1

Line a large rimmed baking sheet with parchment paper.

Step 2

In a medium bowl, combine the protein powder, peanut butter, maple syrup and crispy rice cereal; mix until well combined. Using your hands, shape the mixture into 1-inch balls (a little smaller than a ping-pong ball) and place on the prepared baking sheet.

Chocolate Drizzle
Step 1

In a microwave-safe dish, combine the chocolate chips and olive oil and microwave for 15-second increments, stirring after each cycle, until smooth and melted.

Step 2

Carefully pour the melted chocolate into a zip-top bag or pastry bag. Cut a small corner off of the bag and generously drizzle over each ball. Sprinkle the peanuts on top of the chocolate.

Step 3

Refrigerate for 10 to 15 minutes to allow the chocolate to set before serving. Store in an airtight container in the fridge for up to 1 week or in the freezer for up to 1 month.
