Heart Healthy Pumpkin Toast

Upgrade your breakfast this fall by taking a bite of our hearty Pumpkin Toast recipe! Crispy multigrain toast meets autumnal bliss when a creamy pumpkin spread and a medley of pumpkin seeds, dried cranberries, coconut flakes and chocolate chips are layered on top.

How to Make Pumpkin Toast

  1. Step 1

    In a small mixing bowl, combine the pumpkin purée, yogurt, peanut butter, maple syrup, flaxseed, pumpkin pie spice, cinnamon, nutmeg and black pepper. In a separate small mixing bowl, combine the pecans, cranberries, coconut flakes and chocolate chips.

  2. Step 2

    Toast the bread to desired darkness. Divide the pumpkin mixture evenly on the toast and spread into an even layer. Sprinkle the pumpkin seed mixture evenly on top of each slice of toast. Enjoy immediately.
