Heart Healthy Spaghetti with Vegetables and Pine Nuts Recipe

               
This healthy vegetable spaghetti dish will do wonders in your recipe box. Our delicious, low-cholesterol pasta recipe combines zucchini, quartered mushrooms and delicate pine nuts for a satisfying bite.

Ingredients
Recipe yields 8 servings
1 lb multigrain spaghetti or other pasta
1 Tbsp olive oil
1 medium onion, diced
2 garlic cloves, minced
1 red bell pepper, chopped
2 small zucchini, sliced
1 lb mushrooms, quartered
Black pepper to taste
2 tsp chopped fresh parsley, plus additional for garnish
1/2 cup coarsely chopped pine nuts
1/4 cup grated Parmesan cheese

Directions
Step 1

In a large pot, cook pasta according to package directions, until al dente.

Step 2

In a skillet, heat the oil over medium-high heat until hot. Add the onion and sauté about 3 minutes, or until it is softened. Add the garlic and vegetables, pepper and basil and toss to combine. Cover, reduce heat to medium, and cook about 10 minutes, or until the vegetables are tender.

Step 3

Drain cooked pasta and add it to the vegetables. Add 1/2 cup of the pine nuts and toss to mix well. Serve, topped with remaining 1/2 cup of pine nuts.
