In a colander, strain syrup and transfer to a blender. Add 5 1/2 cups of the strawberries and process until smooth. Transfer to a pitcher.
Slice the remaining 1/2 cup strawberries in half.
Stir in the lime juice, remaining 1/2 cup halved strawberries and lime slices. Serve over ice, garnished with remaining mint sprigs.
