The rich, fragrant flavors of tomato barley risotto are guaranteed to make your next meal memorable. Tangy stewed tomatoes blend with with pearl barley and pantry seasonings for a soothing bowl.
In a large saucepan, combine all ingredients except the Parmesan and parsley and bring to a boil.
Reduce heat, cover and simmer for 30 to 40 minutes, stirring occasionally, until barley is tender and most of the liquid has evaporated.
Sprinkle with Parmesan cheese and fresh parsley. Serve immediately.
