Heart Healthy Tomato Barley Risotto Recipe

               
The rich, fragrant flavors of tomato barley risotto are guaranteed to make your next meal memorable. Tangy stewed tomatoes blend with with pearl barley and pantry seasonings for a soothing bowl.

Ingredients
Recipe yields 6 servings
1/2 cup chopped onion
1 cup dry pearl barley
1 can (15 oz) diced no salt added stewed tomatoes or about 6 chopped fresh tomatoes
1 can (6 oz) tomato paste, no salt added
1 1/2 cups water
1 can (15 oz) low fat, reduced sodium chicken broth
1/2 Tbsp garlic powder
1/2 Tbsp dried oregano
1/2 Tbsp dried basil
Black pepper to taste
1/4 cup grated fresh Parmesan cheese
2 Tbsp chopped fresh parsley

Directions
Step 1

In a large saucepan, combine all ingredients except the Parmesan and parsley and bring to a boil.

Step 2

Reduce heat, cover and simmer for 30 to 40 minutes, stirring occasionally, until barley is tender and most of the liquid has evaporated.

Step 3

Sprinkle with Parmesan cheese and fresh parsley. Serve immediately.
