Add chocolate whey protein powder, almond flour, cacao powder, oat flour, and salt to food processor. Process on high until combined, about 10 seconds. Add Medjool dates, almond butter, flaxseed, chia seeds, and peppermint extract; pulse together until it resembles a coarse sand (Note: if dates are dry, rehydrate them by soaking in hot water for 10 minutes, drain off water, and pat dry). Add water a couple tablespoons at a time until desired consistency is reached.
Transfer dough to a medium mixing bowl. Add old-fashioned rolled oats and mix to combine. If needed, add another tablespoon of water to dough if it is too dry (Note: the old-fashioned oats will pull more of the moisture out).
Line a baking sheet with wax paper. Using your hands, scoop about 1½ tablespoons of dough and roll it in between your hands (Note: using lightly dampened hands to roll the balls helps prevent the mixture from sticking to your hands). Place in refrigerator while preparing chocolate drizzle.
In a microwave-safe dish, combine the chocolate chips and olive oil and microwave for 15-second increments, stirring after each cycle, until smooth and melted. Add peppermint extract and stir to combine (Note: if chocolate begins to seize after mixing in the extract, lightly drizzle a small amount of olive oil into chocolate mixture to loosen it up). Add food coloring a drop at a time until desired color is achieved (about 2 or 3 drops).
Pour the melted chocolate into a zip-top plastic bag or pastry bag. Cut a small corner off of the bag and drizzle over each ball. Place in refrigerator for 30 minutes, until chocolate is set. Enjoy immediately or store in an airtight container in the refrigerator for up to 2 weeks.
