Heart Healthy Pumpkin Waffles Recipe

               
Whole-wheat flour, pumpkin puree and brown sugar create the rich, hearty base of this luscious waffle recipe. Our healthy pumpkin waffles make the perfect partner for fresh fruit and turkey bacon for a balanced breakfast.

Recipe yields 4 servings
1/2 cup all-purpose flour plus 2 Tbsp all-purpose flour
1/2 cup whole wheat flour
2 Tbsp brown sugar
1 tsp cinnamon
1/2 tsp baking powder
1/4 tsp baking soda
1 egg
2 egg whites, lightly beaten
1 cup 1% milk
1/2 cup canned pumpkin purée
3 Tbsp safflower oil

Directions
Step 1

Preheat waffle maker. In a large bowl, mix flours, brown sugar, cinnamon, baking powder and baking soda.

Step 2

In another bowl, beat egg, egg whites, milk, pumpkin and oil. With a rubber spatula, stir wet ingredients into dry ingredients. Do not overmix.

Step 3

Pour batter in waffle maker and cook waffles in batches.
