In a small mixing bowl, combine Dijon mustard, thyme, black pepper and cayenne pepper. Rub mustard mixture all over pork.
Place pork in crockpot. Add water, chicken stock, red wine, and soy sauce to slow cooker. Spread minced garlic on top of pork tenderloin. Season with freshly cracked black pepper.
Cover and cook on low for 4 hours, or on high for 2 to 2½ hours, until internal temperature reaches 145°F (63°C).
Remove pork from crockpot and let rest for 10 minutes on a cutting board or rimmed baking sheet. Discard sprig of rosemary or thyme. Ladle cooking liquid into a gravy boat.
Slice and serve with cooking liquid as au jus. If desired, serve with mashed potatoes or roasted vegetables. Store leftover pork tenderloin in an airtight container in the refrigerator for up to 4 days.
