Gluten Free Ginger Brown Rice Recipe

               
Fluffy brown rice boosted with fresh ginger and lime zest is anything but basic. Serve this incredibly simple, heart-healthy dish alongside a protein or enjoy as is — you will love the versatility and rich, fragrant flavor.

Recipe yields 4 servings
1 medium onion, finely diced
1 cup brown rice
1 tsp grated lime zest
1 Tbsp finely chopped fresh ginger
2 cups low sodium vegetable broth or chicken broth (gluten free if needed)
Black pepper to taste

Step 1

Lightly coat a saucepan with nonstick cooking spray and heat over medium heat. Add the onion and cook until softened. Add the rice and sauté for 1 minute. Add lime zest and ginger and cook for 1 minute more. Add broth and bring to a boil. Simmer, covered, for 30 to 45 minutes, or until rice is tender. Season with black pepper to taste.
