This easy, gluten-free spiced waffle recipe comes equipped with maple syrup added right into the batter. The sweet, pillowy taste and heart-heathy benefits make this breakfast recipe a winner.
Recipe yields 12 servings
In a small saucepan over medium-high heat, bring the apple cider to a boil. Continue to cook until it is reduced by half, or about 1/2 cup, about 15 minutes.
In a large bowl, whisk together the flours, baking powder, cinnamon, nutmeg, ginger and salt until well blended. In another bowl, whisk together the eggs, coconut oil, reduced apple cider and maple syrup. Add the egg mixture to the flour mixture and whisk well until smooth.
Preheat your waffle iron. Cook according to your waffle maker’s instructions.
Top with sliced apple, a dollop of whipped cream and a sprinkle of additional cinnamon, if desired.
