Healthy Kids Chicken Mushroom Spinach Wraps Recipe

               
Use rotisserie or leftover chicken to make this deliciously healthy wrap. Sautéed mushrooms, sliced cucumbers, and baby spinach add nutrient-rich goodness to every deli-fresh bite.

Recipe yields 4 servings
1 Tbsp olive oil
8 oz white button mushrooms, sliced
3 garlic cloves, minced
2 cups sliced cooked chicken breast
1 tsp dried thyme
1 tsp chopped fresh parsley
1/8 tsp salt
Black pepper to taste
2 cups baby spinach
1/2 red onion, sliced
1/2 cup sliced cherry tomatoes
1/2 cucumber, sliced
4 spinach tortillas (10 inches each)

Directions
Step 1

In a large skillet, heat the oil over medium heat. Add the mushrooms and cook until the mushroom liquid is evaporated and mushrooms begin to brown, about 5 minutes. Add the garlic and cook for 1 minute. Add the cooked chicken, thyme, parsley, salt and black pepper and cook about 2 minutes.

Step 2

Divide the chicken and mushroom mixture, spinach leaves, red onion, cherry tomatoes and cucumber slices among the 4 tortillas. Roll the tortillas into wraps.
