FAQs About Heart Healthy Air Fryer Hasselback Potatoes

  • It typically takes 25-35 minutes at 400°F (200°C), but this can vary based on your air fryer model and the size of your potatoes. Check for doneness by inserting a fork into the center; it should be tender.
  • The best method is to place a chopstick or the handle of a wooden spoon on either side of the potato. This acts as a stopper for your knife, preventing you from slicing all the way through and keeping the base intact.
  • All-purpose or starchy potatoes like Yukon Gold or Russet are excellent choices. Their texture becomes fluffy and tender on the inside while the thinly-sliced outside gets perfectly crispy.

Soaking is not necessary for this recipe. While soaking can remove excess starch for crispier deep-fried potatoes, the air fryer's convection heat and the thin-slicing technique will create a great crispy texture without this extra step.

How to Make Air Fryer Hasselback Potatoes

  1. Step 1

    Preheat air fryer to 400°F.

  2. Step 2

Set potato on cutting board and place a chopstick on either side of the potato. With a sharp, thin knife, make deep vertical cuts ⅛-inch apart, but without cutting all the way through the potato. Repeat with the other potato. Set chopsticks aside and fan the potatoes open slightly.

  3. Step 3

In a small bowl, combine garlic, olive oil, black pepper and parsley. Drizzle garlic mixture over the potatoes and use pastry brush to spread evenly and in between slices of each potato.

  4. Step 4

Lightly grease air fryer basket with nonstick cooking spray. Place the potatoes in the basket and cook for 30 minutes, until golden brown and crispy.

  5. Step 5

Garnish with chopped fresh parsley or sliced green onion. Serve hot with a side of Bang Bang Sauce or plain nonfat Greek yogurt.

Alternative Cooking Methods

If you don't have an air fryer, you can bake these in a conventional oven. Preheat your oven to 425°F (220°C) and place the prepared potatoes on a baking sheet. Bake for 40-50 minutes, or until the edges are crispy and the center is tender.

Serving & Storage Tips

  • Serving: Serve immediately while hot and crispy. They pair well with our Greek Yogurt Salad Dressing, fresh chives, or your favorite low-sodium dipping sauce.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: For the best texture, reheat potatoes in the air fryer at 375°F (190°C) for 3-5 minutes until they are warmed through and crispy again.

Ingredient Substitutions

  • Potatoes: Sweet potatoes are a great alternative for a different flavor and added nutrients; cooking time may need to be adjusted slightly.
  • Herbs: Feel free to use other robust herbs like finely chopped rosemary or thyme instead of, or in addition to, parsley.
  • For a Cheesy Flavor: To keep the dish low-sodium and vegan-friendly, sprinkle with a tablespoon of nutritional yeast during the last 5 minutes of cooking. This adds a savory, cheesy taste without the extra fat and sodium of real cheese.
