Heart Healthy Black Forest Trifle Recipe

               
Heavenly chocolate mousse swirled with homemade whipped cream, dark cherries, and vanilla creates a one of a kind, heart-healthy dessert. Garnish with fresh mint for a deliciously cool finish.

Recipe yields 12 servings
Mousse
2 ripe avocados, pitted and peeled
2 medium bananas, sliced and frozen
1/4 cup cocoa powder, plus additional for garnish or
4 dates, pitted
1/4 tsp ground cinnamon
Whipped Cream
1 can (13.5 oz) full-fat coconut milk, refrigerated overnight
1/2 tsp vanilla extract
1 Tbsp maple syrup
Trifle
1 1/2 cups frozen dark cherries, chopped and drained
24 cherries, for garnish if desired
Dark chocolate, for garnish
Fresh mint, for garnish

Mousse
Step 1

Make mousse: In a blender, combine avocados, bananas, cocoa powder, dates and cinnamon and blend until smooth and creamy.

Whipped Cream
Step 1

Make whipped cream: Remove the coconut milk from the refrigerator. Separate out the top layer of thick cream from the liquid (discard the liquid). In a chilled small mixing bowl, blend coconut cream for 4 minutes or until soft peaks form. Add the vanilla and maple syrup and whip for an additional 1 to 2 minutes, or until stiff peaks form.

Trifle
Step 1

Assemble trifle: In a glass serving bowl, layer mousse, frozen cherries and whipped cream. Garnish with cocoa powder, whole cherries, dark chocolate and mint, if desired. Serve immediately.
