Heart Healthy Breakfast Tortilla Recipe

               
This easy, open-faced egg tortilla makes a healthy and satisfying start to your day. Spinach and chopped tomato add a tasty spin to this heart-healthy breakfast recipe.

Recipe yields 1 servings
1 cup spinach
1 whole grain tortilla (6-inch diameter)
1 plum tomato, chopped
1 large egg
Black pepper to taste
1/4 cup shredded reduced-fat cheddar cheese

Directions
Step 1

Preheat oven to 450°.

Step 2

Lightly coat a large skillet with nonstick cooking spray and heat over medium heat until hot. Add spinach and cook until wilted, 2 to 3 minutes. Set aside.

Step 3

Lightly coat a large baking sheet with nonstick cooking spray. Place tortilla on baking sheet and bake for 5 minutes, or until lightly browned. Remove from the oven.

Step 4

Arrange tomato and spinach on the tortilla. Crack egg onto the center of the tortilla. Season with pepper, return to the oven, and bake for 12 minutes, or until yolk is set. Remove from oven, sprinkle cheese on top and bake until cheese has melted, about 2 minutes. Serve immediately.
