Just make sure to check the labels on the broth, canned tomatoes and any other ingredients that may have traces of gluten in them, especially if you have a gluten allergy. To round out the meal, serve with rice, which is naturally gluten free or opt for a gluten-free pasta. Or you can simply serve with additional vegetables.

Cacciatore sauce typically consists of onions, garlic, bell peppers, mushrooms, tomatoes, broth and herbs such as basil, parsley and oregano. In this recipe, the sauce is made by sautéing the vegetables with wine, then adding diced tomatoes, chicken broth and herbs before simmering until thickened.

How to Make Chicken Cacciatore

  1. Step 1

Season the chicken with salt and black pepper. In a heavy saucepan, heat 2 teaspoons of the oil over medium-high heat until hot. Add the chicken, basil and parsley and sauté until chicken is golden brown. Transfer chicken to a platter and set aside.

  2. Step 2

In the same saucepan, heat the remaining 1 teaspoon oil. Add the onion, garlic, bell pepper, mushrooms and wine. Sauté until the vegetables are tender and the wine is reduced by half, about 4 minutes. Return chicken to saucepan and stir to coat chicken with sauce. Add the tomatoes, broth and oregano. Reduce heat to medium low and simmer for 15 minutes, or until chicken is cooked through. Serve topped with the sauce and additional fresh basil, if desired.
