How to Make Chicken Cacciatore

  1. Step 1

    Season the chicken with salt and black pepper. In a heavy saucepan, heat 2 teaspoons of the oil over medium-high heat until hot. Add the chicken, basil and parsley and sauté until chicken is golden brown. Transfer chicken to a platter and set aside.

  2. Step 2

    In the same saucepan, heat the remaining 1 teaspoon oil. Add the onion, garlic, bell pepper, mushrooms and wine. Sauté until the vegetables are tender and the wine is reduced by half, about 4 minutes. Return chicken to saucepan and stir to coat chicken with sauce. Add the tomatoes, broth and oregano. Reduce heat to medium low and simmer for 15 minutes, or until chicken is cooked through. Serve topped with the sauce and additional fresh basil, if desired.
