Simple pantry ingredients become a magically creamy rice pudding in this easy, low-fat recipe.
In a medium saucepan, combine 2 cups of the milk and the rice and bring to a boil over medium heat. Reduce heat to low, cover and simmer for 20 minutes.
Add the remaining 2 cups milk, cinnamon stick, sugar, lemon zest and vanilla. Stir to combine.
Cover and cook over medium heat until thick and creamy, about 20 minutes, stirring occasionally. Remove from heat. Remove and discard the cinnamon stick.
Sprinkle with ground cinnamon before serving. Serve warm or chilled.
