Preheat oven to 350°F. Line a baking sheet with parchment paper and lightly spray with nonstick cooking spray. Set aside.
Add the Medjool dates and walnuts to the bowl of a food processor (Note: If dates are dry before using, rehydrate them by soaking them in hot water for 10 to 15 minutes and pat dry). Blend on low until finely ground and it resembles a chunky paste.
Add egg, vanilla extract, cinnamon, and baking soda and blend until just combined. Transfer dough to a medium mixing bowl and fold in chocolate chips using a rubber spatula.
Using a tablespoon, measure out heaping tablespoonfuls of dough and place on prepared baking sheet. Bake for 12 to 14 minutes, until cookies are golden brown on outside.
Remove from oven and allow to cool on pan for 5 minutes to allow them to set. Enjoy immediately or store in an airtight container in the refrigerator for up to 1 week.
