Recipe yields 2 servings
2 cups unsweetened vanilla oat milk
3 Tbsp canned pumpkin purée
2 Tbsp brown sugar, packed
1 Tbsp vanilla extract
1/2 tsp pumpkin pie spice
1/4 tsp ground cinnamon
1/8 tsp freshly ground nutmeg
1 cup brewed coffee
Plant-based whipped cream, for serving (optional)
Pumpkin pie spice, for garnish (optional)
Cinnamon sticks, for garnish (optional)

Directions
Step 1

In a medium saucepan, add the milk, pumpkin purée and sugar and cook over medium heat. Heat the mixture until hot, but not boiling. Remove from heat and whisk in the vanilla, pumpkin pie spice, cinnamon, nutmeg and coffee.

Step 2

Divide the mixture between two mugs. If desired, top with whipped cream, a sprinkle of pumpkin pie spice and a cinnamon stick. Enjoy immediately.
