Heart Healthy Curry Chicken Salad Wrap Recipe

               
Ready in just 15 minutes, this light and healthy chicken salad recipe is a quick and delicious way to meal prep for lunch. Fresh fruit and vegetables, Greek yogurt and a kick of curry powder make for a flavorful and nutritious wrap.

Recipe yields 6 servings
1/2 cup nonfat plain Greek yogurt
2 Tbsp fresh lemon juice
1 tsp curry powder
1 can (12 oz) no salt added roasted chicken packed in water, drained
1 1/2 cups seedless red grapes, cut in half
1 celery stalk, diced
2 Tbsp minced red onion
2 Tbsp sliced almonds, toasted
6 whole wheat tortilla wrap (10-inch diameter)
6 Romaine lettuce leaves, washed
1 large tomato, sliced

Directions
Step 1

In a medium bowl, combine yogurt, lemon juice and curry powder. Add chicken, grapes, celery, red onion and almonds and mix well.

Step 2

Place about 1/2 cup of tuna mixture into the center of each tortilla. Add lettuce and tomato and roll up.
