Preheat oven to 350°F. Lightly grease a 2-quart casserole dish with nonstick cooking spray; set aside.
Cook the macaroni to al dente according to package directions, about 8 minutes. Drain and lightly drizzle with extra virgin olive oil to prevent it from sticking.
In a saucepan, combine milk, sour cream, butter, mustard, mozzarella, cheddar cheese, salt and pepper and cook over medium-high heat, stirring, until cheese is melted and a sauce forms.
In a large bowl, combine cooked macaroni and cheese sauce. Stir gently to combine. Pour macaroni into prepared casserole dish.
In a small mixing bowl, combine all ingredients and mix until well combined. Sprinkle bread crumb mixture evenly over macaroni mixture. Loosely cover with aluminum foil and bake for 30 minutes.
Uncover and bake for an additional 5 minutes, until the bread crumbs are golden brown and the cheese is melted. Garnish with chopped parsley and serve immediately.
