How to Make Beet Waffles

Beet Waffles

  1. Step 1

    Preheat oven to 200°F. Take out a large baking sheet and set aside.

  2. Step 2

    Combine almond milk, beets, and food coloring in blender. Blend on high until smooth, about 1 minute. Add additional red food coloring until desired color is achieved. While blender is running, add eggs, applesauce, and vanilla; blend on high until well combined, about 30 seconds.

  3. Step 3

    In a large mixing bowl, sift together the gluten-free flour, cinnamon, sugar, baking powder, and salt. Pour beet mixture into dry ingredients and stir until just combined.

  4. Step 4

    Preheat waffle iron and lightly grease with nonstick cooking spray. Pour about ½ cup batter for each waffle. Cook until crisp, about 4 to 5 minutes (check waffle iron manufacturer’s instructions). Transfer cooked waffles onto baking sheet and place in oven to stay warm until ready to serve.

Toppings

  1. Top each serving of waffles with a dollop of nonfat vanilla Greek yogurt, blueberries, and a light dusting of cinnamon. If desired, drizzle lightly with warm maple syrup.
