Healthy Kids Date Nut Muffins Recipe

               
Satisfy your sweet tooth the low-fat way with these enticing date nut muffins. Brown sugar, chopped pecans, and whole-wheat flour make for a fiber-rich treat that only contains 75 calories per serving.

Recipe yields 48 servings

1 1/2 cups water
1 cup chopped dates
1 1/4 cups whole wheat flour
1 1/4 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
3 1/2 tsp baking powder
1 tsp salt
1 cup chopped pecans, plus additional for garnish
1 egg
3 Tbsp canola oil

Directions
Step 1

Preheat oven to 350º. Lightly coat a mini-muffin pan with nonstick cooking spray or line with mini-muffin paper liners.

Step 2

In a saucepan, bring water to a boil. Carefully pour dates into the boiling water. Remove saucepan from heat and let water cool.

Step 3

In a large bowl, mix all ingredients, including the dates and water. With a hand mixer, beat on medium speed for 30 seconds, until combined.

Step 4

Fill muffin cups 2/3 full. Bake for 20 minutes, or until a toothpick inserted of a muffin comes out clean.
