How to Make Date Nut Muffins

  1. Step 1

    Preheat oven to 350ยบ. Lightly coat a mini-muffin pan with nonstick cooking spray or line with mini-muffin paper liners.

  2. Step 2

    In a saucepan, bring water to a boil. Carefully pour dates into the boiling water. Remove saucepan from heat and let water cool.

  3. Step 3

    In a large bowl, mix all ingredients, including the dates and water. With a hand mixer, beat on medium speed for 30 seconds, until combined.

  4. Step 4

    Fill muffin cups 2/3 full. Bake for 20 minutes, or until a toothpick inserted of a muffin comes out clean.
